K\u00ebto krimba, t\u00eb gjat\u00eb deri n\u00eb 3 centimetra, jan\u00eb v\u00ebrejtur me sy t\u00eb lir\u00eb gjat\u00eb analizave laboratorike q\u00eb jan\u00eb kryer nga data 24 n\u00ebntor 2023 deri m\u00eb 6 shkurt 2024.<\/p>\n<p>\u201c\u00cbsht\u00eb e domosdoshme t\u00eb shpjegohet se ngarkesat me peshk nga SHBA, Kanadaja, Spanja, Kroacia, Maqedonia e Veriut, n\u00eb Republik\u00ebn e Kosov\u00ebs vin\u00eb t\u00eb ngrira n\u00eb m\u00eb shum\u00eb se -18 C dhe me certifikata sh\u00ebndet\u00ebsore t\u00eb autoriteteve t\u00eb k\u00ebtyre vendeve. Fazat larvore t\u00eb parazit\u00ebve t\u00eb till\u00eb q\u00eb paraqesin rrezik p\u00ebr sh\u00ebndetin e konsumatorit jan\u00eb (1) nematoda, kryesisht larvat e specieve Anisakis dhe Pseudoterranova decipiens, (2) larvat (plerocerkoide) t\u00eb Diphyllobothrium cestodes dhe (3) larvat (metacercariae) t\u00eb trematodave.<\/p>\n<p>METODAT P\u00cbR VRASJEN E FAZAVE T\u00cb LARVAVE T\u00cb PARAZITETVE<br \/>\nProduktet e peshkut shpesh vendosen n\u00eb treg si produkte t\u00eb fresk\u00ebta peshkimi, t\u00eb cilat, p\u00ebrpara se t\u00eb hahen, trajtohen me nxeht\u00ebsi nga konsumatori n\u00eb nj\u00eb m\u00ebnyr\u00eb q\u00eb siguron vrasjen e parazit\u00ebve t\u00eb mundsh\u00ebm. Kjo \u00ebsht\u00eb nj\u00eb praktik\u00eb e vendosur dhe e pranuar edhe pse produkte t\u00eb tilla t\u00eb fresk\u00ebta t\u00eb peshkut mund t\u00eb p\u00ebrmbajn\u00eb parazit\u00eb t\u00eb gjall\u00eb n\u00eb momentin e blerjes.<br \/>\nTeksti legjislativ specifikon temperatur\u00ebn dhe koh\u00ebn p\u00ebr trajtimin q\u00eb do t\u00eb aplikohet nga operator\u00ebt e biznesit ushqimor p\u00ebr t\u00eb vrar\u00eb parazit\u00ebt e mundsh\u00ebm. P\u00ebr parazit\u00ebt e ndrysh\u00ebm nga trematodat, trajtimi me ngrirje duhet t\u00eb ul\u00eb temperatur\u00ebn n\u00eb t\u00eb gjith\u00eb pjes\u00ebn e produktit ose n\u00eb -20 \u00b0C ose m\u00eb t\u00eb ul\u00ebt p\u00ebr jo m\u00eb pak se 24 or\u00eb, ose n\u00eb -35 \u00b0C ose m\u00eb t\u00eb ul\u00ebt p\u00ebr jo m\u00eb pak se 15 or\u00eb.<br \/>\nP\u00ebr parazit\u00ebt e ndrysh\u00ebm nga trematodat, legjislacioni specifikon nj\u00eb trajtim termik me nj\u00eb temperatur\u00eb qendrore prej 60\u00b0C ose m\u00eb shum\u00eb p\u00ebr 1 minut\u00eb. Arritja e nj\u00eb temperature t\u00eb till\u00eb baz\u00eb varet nga trash\u00ebsia dhe p\u00ebrb\u00ebrja e produktit. \u00cbsht\u00eb vler\u00ebsuar se nj\u00eb fileto me trash\u00ebsi 3 cm duhet t\u00eb nxehet p\u00ebr 10 minuta p\u00ebr t\u00eb siguruar q\u00eb larvat Anisakis spp. t\u00eb shkat\u00ebrrohen. Megjithat\u00eb, fazat e larvave (metacercaria) e trematodave (p\u00ebrfshir\u00eb speciet Opisthorchis dhe speciet Clonorchis) q\u00eb ndodhen n\u00eb peshqit e uj\u00ebrave t\u00eb \u00ebmbla n\u00eb zona t\u00eb caktuara gjeografike jane m\u00eb rezistente ndaj temperaturave. Operator\u00ebt e biznesit ushqimor q\u00eb vendosin n\u00eb treg peshkun e ujit t\u00eb \u00ebmb\u00ebl duhet t\u00eb marrin parasysh gjithashtu rrezikun q\u00eb produkte t\u00eb tilla mund t\u00eb p\u00ebrmbajn\u00eb metacercariae q\u00eb mund t\u00eb paraqesin rrezik p\u00ebr sh\u00ebndetin n\u00ebse synohet t\u00eb hahet pa nj\u00eb trajtim q\u00eb vret parazit\u00eb t\u00eb till\u00eb.<\/p>\n<p>Raporte t\u00eb ndryshme tregojn\u00eb parametra t\u00eb ndrysh\u00ebm p\u00ebr trajtimin e ngrirjes q\u00eb vrasin metacercariae t\u00eb ndryshme trematode, t\u00eb cilat p\u00ebrs\u00ebri jan\u00eb reflektuar n\u00eb dispozita t\u00eb ndryshme legjislative n\u00eb mbar\u00eb bot\u00ebn. EFSA i referohet n\u00eb Opinionin e saj mbi Parazit\u00ebt n\u00eb Produktet e Peshkimit deklaratave t\u00eb OBSH-s\u00eb se metacercaria e Opisthorchis spp. dhe Clonorchis spp. vriten duke i ngrir\u00eb n\u00eb -10\u00b0C p\u00ebr 5 dit\u00eb. Parametra t\u00eb tjer\u00eb temperatur\u00eb-koh\u00eb p\u00ebr metacercariae t\u00eb ndryshme mund t\u00eb gjenden nd\u00ebr t\u00eb tjera n\u00eb Dokumentin Teknik t\u00eb Peshkimit FAO 444.<\/p>\n<p>K\u00ebto t\u00eb dh\u00ebna p\u00ebrfshijn\u00eb referenca q\u00eb tregojn\u00eb se duhen 3-4 dit\u00eb p\u00ebr t\u00eb vrar\u00eb larvat e Clonorchis sinensis n\u00ebse ngrihen n\u00eb -20\u00b0C dhe 32 or\u00eb p\u00ebr t\u00eb vrar\u00eb larvat e Opisthorchis felinus n\u00eb -28\u00b0C.Lidhur me trajtimin termik q\u00eb do t\u00eb vras\u00eb metacercariae EFSA referohet n\u00eb Opinionin e saj mbi Parazit\u00ebt n\u00eb Produktet e Peshkimit n\u00eb nj\u00eb temperatur\u00eb prej 70\u00b0C p\u00ebr 30 minuta p\u00ebr vrasjen e Clonorchis dhe Opisthorchis metacercariae. Legjislacioni specifikon q\u00eb operator\u00ebt e biznesit ushqimor nuk duhet t\u00eb kryejn\u00eb trajtimin e ngrirjes p\u00ebr produktet e peshkut q\u00eb jan\u00eb ruajtur si produkte peshkimi t\u00eb ngrira p\u00ebr nj\u00eb periudh\u00eb mjaft t\u00eb gjat\u00eb p\u00ebr t\u00eb vrar\u00eb parazit\u00ebt e mundsh\u00ebm. Sipas legjislacionit, produktet e ngrira t\u00eb peshkut duhet t\u00eb mbahen n\u00eb temperatur\u00eb jo m\u00eb shum\u00eb se -18\u00b0C n\u00eb t\u00eb gjitha pjes\u00ebt e produktit. EFSA rekomandon ruajtje minimale 96 or\u00eb n\u00eb -18\u00b0C p\u00ebr t\u00eb siguruar vrasjen e suksesshme t\u00eb Anisakis simplex. P\u00ebr larvat e cestod\u00ebs, larvat Diphyllobothrium inaktivizohen n\u00ebse peshku mbahet n\u00eb -18\u00baC p\u00ebr t\u00eb pakt\u00ebn nj\u00eb dit\u00eb. Megjith\u00ebse larvat e trematodave jan\u00eb disi m\u00eb rezistente, mund t\u00eb konkludohet se gjat\u00eb periudh\u00ebs s\u00eb produkteve t\u00eb ngrira t\u00eb peshkimit mbahen normalisht n\u00eb -18 \u00b0C gjat\u00eb ruajtjes n\u00eb ftoht\u00eb, transportit dhe zinxhirit t\u00eb shp\u00ebrndarjes do t\u00eb vrasin t\u00eb gjith\u00eb parazit\u00ebt q\u00eb mund t\u00eb p\u00ebrfaq\u00ebsojn\u00eb nj\u00eb rrezik p\u00ebr sh\u00ebndetin e konsumatorit. Metoda t\u00eb tjera p\u00ebrve\u00e7 ngrirjes ose trajtimit termik, si p\u00ebr shembull kriposja e that\u00eb p\u00ebr nj\u00eb periudh\u00eb t\u00eb caktuar, mund t\u00eb vrasin gjithashtu parazit\u00ebt e pranish\u00ebm n\u00eb produktet e peshkimit. N\u00ebse metoda t\u00eb tjera t\u00eb tilla p\u00ebrdoren nga operator\u00ebt e biznesit ushqimor p\u00ebr t\u00eb vrar\u00eb parazit\u00ebt q\u00eb mund t\u00eb paraqesin rrezik p\u00ebr sh\u00ebndetin e konsumatorit, trajtimi duhet t\u00eb kryhet n\u00eb p\u00ebrputhje me nj\u00eb vler\u00ebsim rreziku q\u00eb dokumenton efikasitetin e tij.
